This time of year I long for icebox desserts. We had one that was a family favorite while growing up, “Lemon Icebox Pie.” When Mom made this delicious dessert, it was a special day. When I was grown and ready to make treats for my own family, I called Mom to ask for the secret family recipe only to find that it was taken from the label on the can of Eagle Brand Sweetened Condensed Milk. The real shock came when I went to the store and found out that they had removed the recipe from the can. Thankfully, Mom remembered every detail. Some of the best recipes we have cooked through the years came from the labels on packaging of products.

Our new Taste of the South magazine special edition, Southern Pies & Icebox Desserts, has some of the best icebox recipes for your summer enjoyment, including their own version of Lemon Icebox Pie that’s delicious and easy to prepare.

Flipping through the issue’s pages, I found a number of recipes I’m excited to make, including a delightful-looking Italian Cream Tart and a Black Bottom Banana Cream Pie.     This may be my favorite summer dessert ! EASY !
    Any dessert made with lemons would be my favorite !
    Now, if only my lemon tree will cooperate … perhaps at summers
    end , I will have lovely lemons .

    If not , that is why we have grocery stores !

  2. Well dear Phyllis! You’ve done it again…off to the store for lemons I have everything else. Remained hubby of the ole Icebox desserts and its suppose to be over 100 degree here in the foothills of El Dorado County so I’ll surprise him tonight. Will also need to pick up the magazine.   3. Fresh Strawberry Pie & Fresh Peach Cobbler are my favorite summer dessert. I make these frequently when both fruits are in season!
