Stay Warm With Southern Style Minestrone

When the temperature drops and you want to feel warm from the inside out, there is only one thing to do! This winter I will be keeping warm with a bowl of this delicious slow cooker Southern Minestrone soup. The recipe is one of many comforting and welcoming reprieve from the cold included in the Taste of the South’s Slow Cooker Special Issue. When the evening air gets to be too cold, start a fire and stay warm with a bowl of this wonderful soup!  

Southern Minestrone
Makes 8 to 10 servings

Ingredients
  1. 1 1⁄4 pounds ground mild Italian pork sausage
  2. 2 cups chopped yellow onion
  3. 1 cup chopped carrot
  4. 1 cup chopped celery
  5. 2 teaspoons minced fresh garlic
  6. 6 cups vegetable broth
  7. 2 (16-ounce) cans pinto beans, drained and rinsed
  8. 1 (14.5-ounce) can diced tomatoes, undrained
  9. 1 cup fresh or frozen field peas with snaps
  10. 1 1⁄4 teaspoons salt
  11. 1 teaspoon ground black pepper
  12. 1⁄2 teaspoon ground oregano
  13. 2 cups dried pasta, such as ditalini
  14. 2 tablespoons red wine vinegar
  15. Garnish: fresh parsley, Parmesan cheese
Instructions
  1. 1. In a medium skillet, cook sausage over medium heat until browned. Drain, if necessary.
  2. 2. In a 5- to 6-quart slow cooker, add cooked sausage, onion, carrot, celery, garlic, broth, beans, tomato, peas, salt, pepper, and oregano. Cover and cook on low for 6 hours.
  3. 3. During last 30 minutes of cooking, add pasta and vinegar. Cook, uncovered, until pasta is tender. Garnish with parsley and cheese, if desired.

  1. Serving this New Years Day. Substituting black eyed peas for the field peas and adding some chopped spinach . I am going to serve it with hot cornbread. Lemon bars for dessert. What a great way to bring in the New Year!!

  2. Sounds delicious! My dearest friend is Italian and always serves her Grandfather’s recipe for minestrone. Will enjoy sharing this Southern style version with her.

    Being a typical Southern cook, first thing I want to do is vary the recipe to my family’s taste. What about adding some fresh greens early in the cooking time or canned ones when you add the pasta?

    A cup of rich hot chocolate in midafternoon and a warm soup or stew for supper are two of our ways for staying warm.

    Although with over 80 degrees on Christsmas Day and in the mid-70’s last week and this one, we Texans are out at the grill not making soup right now! 🙂

  3. Perfect! This is the time of year when slow cooker soup is one of my secrets for being able to invite family and friends over for an easy, quick to make but delicious supper. Add a salad, some crusty bread, and an easy dessert and dinner is ready. Thank you for sharing this recipe!
