One of my favorite desserts when I was growing up was strawberry pie. On Sunday nights after church our youth group would go to a local restaurant that was famous for strawberry pie.

I was thrilled to be given this recipe for an easy pie. It is so close to the one I remember as a youth, it makes me smile. It is simple to cook and will be a fabulous ending to any meal.

Ingredients
  1. 1 deep-dish pie crust
  2. 10 ounces lemon-lime cola
  3. 1 cup sugar
  4. 3 tablespoons cornstarch
  5. 5-6 drops red food coloring
  6. 4 cups sliced fresh strawberries
  7. Whipped topping
Instructions
  1. Bake pie shell according to package instructions. If you choose, make your own pie shell and bake it completely, then cool. Set aside.
  2. Combine cola, sugar, cornstarch, and food coloring in a medium pan, and cook over medium heat until filling is thick. Let cool completely.
  3. Put sliced strawberries into pie shell, and cover with the cooled mixture. Refrigerate for two hours. Top with whipped topping, and serve immediately. If you prefer, serve with freshly whipped cream.

  1. I remember those after church trips! The last one in Jackson closed several years ago. My mom use to make a great strawberry pie. I’ll have to try this one soon.

  2. I learned how to make strawberry pie from my mother-in-law, Irene Clark. I still have her recipe written out on the back of an envelope! We have one in the refrigerator as I write!

  3. I will be making this for Sunday dessert this weekend! Our strawberries are ready to be picked. And yes, up here in Canada the lime-7up is readily available.

Our whole family,about 16 of us will be going to the lake in two weeks and I intend to take this recipe and make it for everybody while we’re there. It sounds like the perfect summertime dessert!   6. You have done it again !!!! Thank you, Phyllis.I grew up in the Mid-West (many years ago) and one restaurant had Strawberry pie, so good. I have never been able to duplicate that pie and now I know the secret, lemon-lime soda. (Soda, cola, pop,whatever) Thank you, thank you.

  7. That restaurant is making a comeback! We just ate there at Pier Park in Panama City Beach, FL. And sure enough the Server ask if we would like a piece of strawberry pie. I shared with her my memories of going on Sunday night after church and eating strawberry pie. She wanted us to buy a whole pie and take it home! I didn’t tell her that I had the recipe and would make one when we got home! Haven’t made it yet, but I am now! Yum! Glad we have memories to share!

  8. I will be making this with splenda (instead with real sugar) I love strawberry pie. Mother Day dessert is always”Strawberries Shortcakes”. Last 20yrs for Mother Days only. I take the left-overs home to enjoy later!!!

  10. My mother always looked forward to her favourite uncle visiting from New York. He would give her 50cents as she left for school and she knew that this was ear-marked for strawberry pie and a cola…one of her most favourite memories.

  11. Yum-O to you Phyllis! I grew up in Redding, Ca. and a local bakery made a “Mt. Shasta Strawberry Pie” during strawberry season, it became famous and they would publicize their baking dates, I would reserve 3 and take one to my Mom as a treat. Coffee, a mountain high strawberry pie and time with Mom, didn’t get any better. I will make your receipt this week for hubby! Thanks for the memories..

  12. I know people think that THEIR mom’s made the best pies in the world…but I have to say that I KNOW my mom did! She would get up before any of us on a Sunday morning and bake one….Lemon meringue…coconut cream….banana cream….chocolate cream…..cherry…..apple…you know it…..and YES….strawberry pie! As she has gotten older, her health has failed and rheumatoid arthritis has made it impossible for her to bake them anymore. I cannot begin to tell you how that grieved her as pie baking was such a part of who she was….She loved the joy it would bring to everyone! Recently, my dad was at a doctor’s appointment and I was there with her while he was gone. We decided to pie bake! I made two crusts…and that sweet little thing took every once of energy she had and made a custard pie for dad….She was so happy….exhausted…..and couldn’t wait for daddy to see it! After it was baked…she set it on the kitchen table so he would see it right away. It was a precious moment because this was a token of such love for him…and the look in his eyes when he saw it? Priceless…..

  15. Never seen lemon lime cola before- is this a southern item? What is the brand? Very curious recipe- but i want to try it!

  16. This looks easy, and absolutely fabulous, Phyllis. I’ve never seen a recipe with the lemon-lime soda before. I will try it next time my children and grandchildren are at our home for dinner. Might have to make two. 🙂
